Rum Balls

Well, it's that time of year again to bake up the memories. This one is easy and no baking.

1 box of Nilla Wafers
2 T Hershey's Cocoa
1/4 t instant espresso or coffee
1 1/2 cup walnuts
1/2 plus 2 T Bacardi Gold Rum
1 1/2 Cup 10 X sugar (powdered sugar) in a bowl.

In your food processor put the Nilla Wafers, half at a time and process to crumbs. Place in a large bowl
Next do the same with the walnuts
Place in the same bowl. Add the Cocoa and Espresso, mix so everything is evenly mixed. 
Add all but the 2 T of rum. Mix well until the mixture is like a dough, if still dry then drizzle a little of the remaining rum, which is what you will do with the 2T of rum as needed.
I use a measuring Tablespoon to scoop up the dough and roll in your hands to make a ball, then roll in the powdered sugar. 
When you are finished, put the balls in an air tight container. Make these a few days ahead so the Balls soak up the Rum. Usually the Alcohol evaporates( well mostly).
These are just plain yummy.
