Black Eyed Pea Salsa

Ingredients :  Dressing
1/2 Cup Olive Oil
1/2 White Wine vinegar ( or regular)
2 Tbs  Sugar (you could use Splenda if sugar is a concern)
1 Tsp Celery Seed
1/2 Tsp of  Mustard
1/2 Tsp salt
Freshly ground pepper to taste

Veggies:
3 stalks of Celery Chopped fine
3 stalks of Green Onions, chopped
1 whole red bell pepper, chopped
1 whole cucumber, Peeled, Seeded and Chopped
1 whole Jalapeno (optional) seeded and chopped ( it's not hot if you add it, actually, removing the seeds keeps the heat down)
1 Cup or so of Chopped Cilantro
2 Cans Black eyed Peas, Drained
Now if you absolutely hate black eyed peas, then substitute with 2 large or 3 medium chopped tomatoes, fresh if possible...like Maryland tomatoes in the summer time.

Mix together dressing, set aside
Combine all veggies (except cilantro) with black eyed peas. Pour dressing over the top and gently stir together. Add Cilantro and stir gently.

Cover and refrigerate for at least an hour. Serve with tortilla chips.

OK....yes this is a salsa. BUT....I love it served on the side with fish or chicken to put on top . It is really good. This is so fresh tasting and light , Try it, I promise you will be pleasantly surprised how refreshing it is
