ITALIAN SAUCE (Lower Calories)


1 Cup minced sweet vidalia onion
2 T freshly minced garlic
1 large can crushed tomatoes (28oz) (Sun Of Italy is my preference)
1/4 C water
2 T of tomato paste
2 t sugar
1 T dried oregano
2 t dried basil
1/4 t crushed red pepper flakes
Salt to taste
Olive oil spray
Low Fat Parmesan Cheese (optional)

Spray your saucepan with the olive oil spray and place over medium heat, add the onion and garlic and cook until just tender, do not brown garlic as it will become bitter. Cook for 5 minutes. Reduce to low and stir in the tomatoes, water, paste and sugar, and spices. Stir well. Cover and cook on a low temp for an hour or more stirring occasionally. Season with salt if needed.
Approx 80 calories a serving and this makes 7 servings, 1/2 cup each.
You can use this sauce for any number of dishes, or just all alone on pasta of your choosing.
If you have not tried the whole grain pastas that are available, give them a try. They are really good. I like it alone on pasta with a sprinkle of Parmesan cheese.
