Crab Salad

2 lb Special Crab meat

3/4 Cup very finely chopped celery

1 teaspoon of sugar (or 1/2 a packet of equal)

1 rounded teaspoon of Old Bay

Enough "real" Mayonnaise to mix (about a Cup)

Go through Crab meat to make sure it is free of shells. Mix in the celery, sugar and Old Bay. Toss, then add the mayo. Chill for 2 hours. Serve scooped on lettuce, or my favorite way, is to put a nice scoop on bread with lettuce and tomato.

NOTE: I use equal, and it is used to bring out the sweetness of the crab meat.
